Sixteen students from around the world will be discussing their degree theses during the spring graduation session at UNISG this month. On Thursday April 27, from 9am in the Cascina Albertina, 14 of them will be concluding the Three-Year Undergraduate Degree in Gastronomic Sciences, while two will be completing the Two-Year Graduate Degree in Food Innovation and Entrepreneurship.

Here are their names and the titles of their final projects.

Three-Year Undergraduate Degree

Milo Emanuel Buur, 26, from Amsterdam, Holland, will discuss his thesis entitled "Against the Grain – An analysis of the possibilities regarding a renewed grain cultivation on the marginal fields of a Tuscan farm estate," supervised by Prof. Paola Migliorini.

Giorgia Gallo, 24, from Pecetto Torinese (TO), Italy, will discuss her thesis entitled "Analisi dell’agricoltura urbana a Torino: un nuovo modello sostenibile" (“Analysis of urban agriculture in Turin: A new sustainable model”), supervised by Prof. Paola Migliorini.

Johannes Meissner, 27, from Stuttgart, Germany, will discuss his thesis entitled "Characterisation of Kombucha – health claims of a fermented beverage," supervised by Prof. Claudia Picozzi.

Yehonatan Yoni Nimrod, 31, from Givatayim, Israel, will discuss his thesis entitled "The View Through The Gastronomic Eye – Reflection on Ishikawa project study case. Constructing visual representation of the gastronomic ecological point of view on food through travel," supervised by Prof. Piercarlo Grimaldi.

Faith Wambui Njoroge, 27, from Nakuru, Kenya, will discuss her thesis entitled "Impact of Zero Hunger Challenge and sustainable food management: A case study of the North Eastern Kenya," supervised by Prof. Lorenzo Bairati.

Jonas Zackrisson Torp, 27, from Lommedal, Norway, will discuss his thesis entitled "Post New Nordic in the Restaurant Business of Norway," supervised by Prof. Nicola Perullo.

Verena Unterholzner, 28, from Silandro (BZ), Italy, will discuss her thesis entitled "La via di Malles. Come un paese della Val Venosta vuole cambiare il modo di fare agricoltura!" (“The Malles way: How a Val Venosta town wants to change farming”), supervised by Prof. Paolo Corvo.

Laura Ceci, 23, from Andria (BT), Italy, will discuss her thesis entitled "I fumetti mangiano. Storia dell'alimentazione nel mondo della grafica: la nutrizione raccontata nel fumetto americano e giapponese" (“Comics eat: History of food in the graphic art world: nutrition in American and Japanese comics”), supervised by Prof. Simone Cinotto.

Edoardo Brussolo, 22 from Valenza (AL), Italy, will discuss his thesis entitled "L'opera principale di Giovanni Vialardi e la sua riduzione: analisi e confronto di un'originale operazione editoriale" (“Giovanni Vialardi’s main work and its adaptation: Analysis and comparison of an original publishing operation”), supervised by Prof. Antonella Campanini.

Sebastiano Civolani, 22, from Ferrara, Italy, will discuss his thesis entitled "Il cuoco rinascimentale. Preludio alla nascita di un artista" (“The Renaissance chef: Prelude to the birth of an artist”), supervised by Prof. Antonella Campanini.

Alessandra De Iure, 22, from Meudon, Canada, will discuss her thesis entitled "L’evoluzione e l’uso delle salse nella storia e al interno della cultura Italiana e Francese" (“The evolution and the use of sauces in history and within Italian and French culture”), supervised by Prof. Antonella Campanini.

Andres Eduardo Martinez Jara, 27, from Bogota, Colombia, will discuss his thesis entitled "A Colombian Food Story – From the Indigenous to our days," supervised by Prof. Simone Cinotto.

Eleonora Mazzola, 23, from Rome, Italy, will discuss her thesis entitled "Il whisky in Italia: analisi storica del consumo di whisky dalla fine dell’Ottocento ai giorni d’oggi" (“Whisky in Italy: Historical analysis of whisky consumption from the late 19th century to the present day”), supervised by Prof. Simone Cinotto.

Mauro Scarlato, 22, from Scafati (SA), Italy, will discuss his thesis entitled "Passato e presente della Viticoltura in Costiera Amalfitana" (“Viticulture past and present in the Amalfi Coast”), supervised by Prof. Yann Grappe.

 

Two-Year Graduate Degree

Paolo Olivero, 26, from Monticello d'Alba (CN), Italy, will discuss his thesis entitled "Il mestiere di cuoco. Appunti per una storia di professionisti piemontesi del Novecento" (“The trade of chef: Notes for a history of Piedmontese professionals in the 20th century”), supervised by Prof. Antonella Campanini.

Nicolò Pistis, 28, from Venice, Italy, will discuss his thesis entitled "Il vino, il pane e il companatico nel convento di San Nicolò a Treviso nella seconda metà del ‘700" (“Wine, bread and accompaniments in Treviso’s San Nicolò monastery during the second half of the 18th century”), supervised by Prof. Simone Cinotto.
