Roberto Flore, born in 1982 in the mountain village of Seneghe, in the province of Oristano in Sardinia, has come a long way. In fact he now works at Nordic Food Lab in Copenhagen, the research center promoted by René Rezdepi, the celebrated chef at Noma, acclaimed as one of the world’s best restaurants.
Nordic Food Lab is a non-profit organization that studies food and its complexity through a fusion of the arts and science with cooking techniques, and exploration of the natural and gastronomic heritage of the regions of Northern Europe.
In Copenhagen Robert heads an international team, carrying out experiments, coordinating kitchen operations, liaising with producers and visiting their farms and companies to monitor local areas.
At the Academic Tables he will serve dishes that evoke his research experience at Nordic Food Lab, coupling his Sardinian roots with the international influences he has assimilated in the course of his career.
