17 undergraduate students and four graduate students, from Italy, Brazil, Cuba, Germany, Israel, Russia and Switzerland, will be discussing their theses

Pollenzo is abuzz in preparation for the spring graduation session. On Friday April 27, from morning until late afternoon, a total of 21 students will be bringing their studies at the University of Gastronomic Sciences to a close with a discussion of their degree theses. From 9am, 17 students from the three-year undergraduate program will be being examined, while the four two-year postgraduate program students will be starting at 2pm.

The students come from a total of seven countries: Italy, Brazil, Cuba, Germany, Israel, Russia and Switzerland.

Here are their names and thesis titles.


Three-year Undergraduate Degree

Francesca Romana Russo, 28, from Foggia, Italy, will be discussing the thesis "Proper Food startup," supervised by Prof. Franco Fassio.

Alberto Meneghel, 25, from Belluno, Italy, will be discussing the thesis "La rinascita della canapicoltura bellunese: dal recupero storico alla riscoperta delle tradizionali forme di socialità" (“The rebirth of hemp growing in Belluno: From historic revival to the rediscovery of traditional forms of social relations”), supervised by Prof. Paolo Corvo.

Bruno Morett Figueiredo Rosa, 23, from Brazil, will be discussing the thesis ""Making sense of Landscape: an approach to the boundaries of territory, food culture and heritage," supervised by Prof. Roberta Cevasco.

Giuliana Noè, 26, from Nizza Monferrato (Asti), Italy, will be discussing the thesis "L'Asti Secco: la scienza al servizio di un mercato in crisi" (“Asti Secco: Science in service of a market in crisis”), supervised by Prof. Damiano Cortese.

Gherardo Camillo Marazzani Visconti Terzi, 24, from Budrio (Bologna), Italy, will be discussing the thesis "Lo spreco alimentare in Italia: ieri, oggi, domani" (“Food waste in Italy: Past, present and future”), supervised by Prof. Paola Migliorini.

Marfa Bashilova, 31, from Florence, Italy, and Russia, will be discussing the thesis "Guilt-free consumption," supervised by Prof. Nicola Perullo.

Sergio Villaverde García, 22, from Cuba, will be discussing the thesis "Cuban society, immigration to the United States and analysis of food habit variations," supervised by Prof. Paolo Corvo.

Tamara Kerstin Gysel, 25, from Switzerland, will be discussing the thesis "Pontic Greeks and sugarcane: Discovering the origins of Rum," supervised by Prof. Nicola Perullo.

Michal Levit, 34, from Israel, will be discussing the thesis "The exotic local: a critical reading into the ways in which local wild food is perceived in Israel – the case of the Hubeiza," supervised by Prof. Nicola Perullo.

Antonio Citterio, 23, from Milan, Italy, will be discussing the thesis "La Lumaca: produzione, trasformazione ed usi gastronomici" (“Snails: Production, processing and gastronomic uses”), supervised by Prof. Antonella Campanini.

Federico Mattarelli, 23, from Milan, Italy, will be discussing the thesis "Cibo e democrazia, il ruolo della gastronomia nell’evoluzione ed affermazione del potere popolare" (“Food and democracy: The role of gastronomy in the evolution and establishment of popular power”), supervised by Prof. Michele Antonio Fino.

Maria Vittoria Guidoboni, 22, from Ferrara, Italy, will be discussing the thesis "Valutazione di sostenibilità agro-ambientale della provincia di Ferrara" (“Evaluation of agri-environmental sustainability in the province of Ferrara”), supervised by Prof. Paola Migliorini.

Rhys Henkel Maximilian, 26, from Germany, will be discussing the thesis "Sustainability assessment through the example of the chocolate and cocoa industry," supervised by Prof. Paola Migliorini.

Diego Silva Dos Santos, 29, from Brazil, will be discussing the thesis "Analisi sociologica degli orti urbani nelle favelas" (“Sociological analysis of urban food gardens in favelas”), supervised by Prof. Paolo Corvo.

Chiara Margarone, 23, from Turin, Italy, will be discussing the thesis "Analisi della variabilità sensoriale del caffè in capsule" (“Analysis of sensory variability of coffee in capsules”), supervised by Prof. Luisa Torri.

Greta Contardo, 26, from Casarza Ligure (Genoa), Italy, will be discussing the thesis "Food Writing 2.0: nuove forme di editoria gastronomica. Il caso di Cook_inc: Read, Think, Eat, Share" (“Food Writing 2.0 – New forms of gastronomic publishing: The case of Cook_inc: Read, Think, Eat, Share”), supervised by Prof. Maria Giovanna Onorati.

Valeria Ghignone, 35, from Salerno, Italy, will be discussing the thesis "Cibo e identità. Il gusto come 'guida' alla costruzione sociale della soggettività tra memoria e distinzione" (“Food and identity: Taste as ‘guide’ to social construction of subjectivity between memory and distinction”), supervised by Prof. Maria Giovanna Onorati.


Two-year Graduate Degree

Riccardo Maria Mazzoni, 24, from Rome, Italy, will be discussing the thesis "WINE 3.0 - Analisi ed interpretazione delle nuove metodologie di comunicazione nel mondo del vino" (“WINE 3.0 – Analysis and interpretation of new methodologies of communication in the world of wine”), supervised by Prof. Nicola Perullo.

Daniele Consiglio, 27, from Turin, Italy, will be discussing the thesis "Cibo e salute: analisi di un rapporto in continua evoluzione" (“Food and health: Analysis of a relationship in constant evolution”), supervised by Prof. Paolo Corvo.

Giulio De Fazio, 25, from Grottaglie (Taranto), Italy, will be discussing the thesis "The effects of fishing, agriculture, and urbanization on salmon: a case study on the Fraser River, British Columbia, Canada," supervised by Prof. Gabriele Volpato.

Gianfranco Boursier Niutta, 27, from Turin, Italy, will be discussing the thesis "Aree marginali e modelli di business per il turismo sostenibile: ‘Doorway To, l’unione fa il territorio’” (“Marginal areas and business models for sustainable tourism: ‘Doorway To, l’unione fa il territorio’”), supervised by Prof. Valter Cantino.
