"10 menus for 10 students" project presents a new chef!

"I'd like to propose this menu, focused on the food of my home, Philadelphia. First, we are famous for the German speakers, who over decades of isolation, developed their own language and cuisine, called, through classic misunderstanding, Pennsylvania Dutch” says Palmer Marinelli
A student of the Master of Gastronomy: Food in the World (Food Ecologies and Sovereignty), which today, on Friday 18 May, is working side by side with the chefs of Academic Tables to prepare and offer students and staff its American specialties and more.
“For the menu - says Palmer Marinelli - as a first we would have Schnitz und Knepp, a dish of dumplings and dried apple, and Bot Boi, the chicken and noodle soup, thickened with parched spelt. Slow cooked pork, sauerkraut, and beans would make up the main. For dessert, apple dumplings with thickened cream. We could also have savory waffles with catfish gravy, and make bread of potato and spelt. Of course, it's just the start."
