Chef Sveinn Kjartansson of Aalto Bistro in Reykjavik will be cooking at the Academic Tables from May 14 to 16

Located within Reykjavik’s Nordic House cultural center, designed by renowned Finnish architect and designer Alvar Aalto, the Aalto Bistro is run by chef Sveinn Kjartansson, who will be cooking at the Academic Tables in Pollenzo from Monday May 14 to May 16.
A well-known figure in Icelandic gastronomy and also a television personality, Kjartansson’s cooking is based on fresh, local, wholesome ingredients, which change with the rhythm of the seasons. His culinary style is defined as New Nordic, and has a particular focus on fish and seafood.

His colorful menu for the Academic Tables will combine flavors from the north and south.
On Monday May 14, the menu will start with a beetroot soup with cumin, coriander and fennel seeds, followed by polenta with vegetable stew and then roast salt cod with fennel, oranges and aromatic herbs.
Tuesday May 15 will features a dish with barley, smoked fish, seaweed, citrus and sorrel, followed by a vegan frittata with zucchini, chickpeas and almonds accompanied by a beetroot, spinach, kale pesto and strawberry relish, and to finish an orange cake.
On Wednesday May 16 the chef will be preparing a mixed bean salad with vinaigrette and toasted bread, then a salt cod and potato cake with tomatoes and roasted peppers, olives and oregano, and lastly a rhubarb compote with strawberries and meringue.
