12:00 – 14:30 “CHEESE 2023: A USER’S GUIDE”

Lights down, curtains up!
Let the show begin: the shapes, the aromas, the tastings.
But… where to start?

CHEESE 2023: A USER’S GUIDE is not just a lunch, but a journey, a guide to the 14th edition of Cheese for the most disoriented cheese-lovers, featuring the best products and producers from all over the world.

Carol Povigna, Nahuel Buracco, and Matteo Bigi, chefs and researchers at the University of Gastronomic Sciences of Pollenzo will tell you everything you need to know, with a tasting menu that combines technique and indulgence. The goal? To capture in 5 courses the essence of a day walking through the streets of Bra at Cheese.

Price: 100,00€ for a 5-course lunch, paired with 3 wines, and a mini guide of the event so you can find the cheeses used and the recipes of the dishes served at lunch.

17:00 – 20:00 “THE CHEESE WILDEN MIXOLOGY EXPERIENCE”

A mixology workshop where the world of medicinal herbs meets the world of spirits. During this workshop, hosted by Nicola Robecchi, founder of Wilden Herbals, and Velier, we will experiment together, learning how to combine the power of plants with various distillates of different origins and styles. The cocktails will be paired and enjoyed together with the products of Nicola and Michela del Vecchio’s “Alba” farm in Molise.

11:00 – 14:00 TONE’S KHACHAPURI – FROM GEORGIA TO BRA, BY WAY OF MILAN

A home-style baking workshop with Giovanni Marabese, founder of Tone – Milan – a bakery that produces breads and focaccias from all over the world. “Acharuli khachapuri” is a typical Georgian bread “dressed” with fresh or aged cheese and egg, which is usually cooked in the typical oven of that part of the world, called a “Tone”. The version for Cheese will use ancient stone-ground grain flours, Piedmontese cheese, and eggs from happy, free-range hens. In full Casa B. style, it will be prepared and baked using the equipment of a non-professional kitchen, so that you can repeat the experience at home.

Participants will eat the khachapuri prepared during the workshop, accompanied by a glass of natural wine, as an aperitif.

18:00 – 22:00 CASCINA LAGO SCURO MEETS ALESSANDRO DI TIZIO – A WILD DINNER AT CHEESE

Witness the union of two worlds that are made for eachother, but are still unknown to one another: Alessandro with his wild herbs and Luca Grasselli – inevitably accompanied by his crew from Cascina Lago Scuro – for whom cooking is the fullest expression of the raw materials. Improvisation will be cleverly combined with artistry, using what nature has to offer in the month of September, to become a collaborative dinner experience: five courses, each paired with a natural wine.

Price: 100,00€ 5-course dinner, paired with 5 wines, and show cooking demonstration
