Three-year Undergraduate Degree in Food Tech for Ecological Transition
Undergraduate Degree in Food Tech for Ecological Transition
Technology and Food Science Meet Ecology and Strategic Thinking for a Greener Food System
The Bachelor’s degree in Food Tech for Ecological Transition is an inter-university program between the University of Gastronomic Sciences and the Polytechnic University of Turin. It is an interdisciplinary pathway that combines food studies, technology, and the humanities to rethink food production from the ground up.
Taught in English on the campuses of Politecnico di Torino and the University of Gastronomic Sciences of Pollenzo, it pairs lectures with laboratory work, field study, and critical reflection on the cultural and ethical dimensions of food, preparing you for careers at the crossroads of technology and sustainability.
Blending technology, economics, environmental management, and food law with aesthetics, anthropology, and cultural studies, through this curriculum, you will learn to develop solutions that reduce waste, conserve resources, and add value at every step of the food system while ensuring those innovations remain socially responsible and culturally meaningful.
Start date: 21 September 2026

Interdisciplinary Focus
Connect Technology, Science and Society
Our interdisciplinary method translates classroom theory into actionable skills. By working across technology, food science, economics, and social disciplines, you will:
- Design circular processes – apply systemic design and smart‑packaging know‑how to minimise waste and extend product life‑cycles.
- Leverage data & digital tools – use AI, geospatial analysis, and IoT sensors to monitor resources and optimise decision‑making in real time.
- Understand taste & aesthetics – explore ecological aesthetics and critical taste to rethink how food is perceived and valued, inspiring experience-centred innovation beyond conventional product design.
- Embed cultural sustainability – incorporate anthropological insight to ensure innovations respect and enhance diverse food traditions.
- Quantify and manage sustainability metrics – calculate carbon and water footprints and navigate food‑law frameworks to ensure compliance and accountability.
- Drive behavioral change and market innovation – integrate psychology, economics, and communications to align technology adoption with consumer and societal needs.
Each project, lab, and field study is structured to demonstrate how these domains intersect, preparing you to lead complex initiatives in food technology and ecological transition.
Hands‑On Learning: From Lab to Field
Apply Knowledge in Labs and Real‑World Settings
Our action-learning approach seamlessly transitions between classroom insights and real-world applications. Laboratories let you practice core processes in a controlled setting, while field studies to farms and food facilities reveal the challenges of sustainability on the ground.
Skills for Ecological Transition
Measure, Design and Implement Sustainable Solutions
Throughout the program, you learn to measure impact using carbon- and water-footprint tools, redesign products and packaging for circular material flows, and apply sensor-based IoT solutions that enhance resource efficiency. These competencies align with the ecological transition targets established by companies, NGOs, and public agencies.
