A special cooking activity will be held in the Pollenzo Food Lab on 12th March from 2.30 - 5.00.
The theme of the activity will be around 'Spiciness' and will be coordinated by Francesca Filippone, F&B expert, owner of a chinese wine import company and participant of the 2022 Masterchef edition.
Filippone created the project Valigia del Cibo (or "the Suitcase of Flavours") in 2023 with the desire to bring international dishes and stories to the table all over Italy.

It is a traveling cooking school which in 2023 went all over Italy involving more than 20 cooks from around the world. These cooks are people who, for one reason or another, decided to pack their bags and leave their own country to come to live in Italy. During the events these cooks tell their life stories and share a recipe from home with the class.
In Pollenzo the event will be a journey around the spicy flavours of the world. We will go from India chilies with Niraj who will give us an insight into the magical world of Indian spices and their uses.
We'll then move to Japan with Mime where Wasabi and the way it is used in household cuisine will be explored.
Finally, the chinese spiciness with Francesca, with Sichuan peppercorns and their use in local dishes.
