Tourism and Situated Gastronomy in Paraty, Brazil

We will be discussing the relationship between tourism and gastronomy from the perspective of valuing local resources and promoting the sustainable development of traditional communities around Paraty in the Brazilian state of Rio de Janeiro. We will present some results from the research project “From the land to the table: Mapping food practices and knowledge and evaluating sovereignty and food and nutritional security policies in traditional communities in Brazil, Bolivia and Uruguay,” carried out between 2017 and 2020, where we identified food-related social technologies that can be integrated into community-based tourism initiatives. We have adapted the organization of Seminars and Conferences in respect of the government health provisions to guarantee strict compliance from all those involved in the academic experience (students, teachers, administrative staff), in an effort to safeguard everyone’s safety.
For this reason all the conferences will take place remotely
