Specialty Coffee and Cacao from Colombia: Production, Markets and Flavors – Gabriela Montañez and Francesco Anastasi (Santaromero coffee), Manlio La Rotonda (Cacao Disidente)
Cacao and coffee are two of the most important post-colonial products traded in the world. But how can we define their quality? The goal is to understand the processes in order to move the focus from consumption to agriculture.
After a brief introduction to Colombia, the focus will be on chocolate and coffee. During the final tasting, some samples will be paired in order to understand the basics of professional tasting.
Santaromero Coffee is a specialty Colombian coffee project which will soon open a micro-roastery in Italy. The idea is to roast coffee grown by our friends in Colombia, following high quality standards and sustainable practices to emphasize the producers’ work.
Cacao Disidente is a cacao and chocolate company based in Bogotá. It focuses on excellent raw materials from different varieties and terroirs and works directly with communities to improve agricultural practices.
