Sensory analysis for Protected Designation of Origin in Europe

Protected Designation of Origin (PDO) are present in almost every European country and they are considered quality product, but not always this image of quality is connected with specific sensory features; the different countries of Europe have a different idea of quality. In the north the nutritional and environmental features are considered very important, in the south on the contrary the cultural gastronomic heritage and sensory features have a strong appeal.
The “single document” of PDOs registered in EU database always shows the sensory features of the products, but these features are not always controlled. The sensory control, when present, is different in each European country.
Sensory analysis has more chance of being introduced for products of prestige and market relevance. Sensory analysis is an essential tool to define the specificity of a PDO.
