Making Food, Creating Boundaries and the Taste of Place
with Amy Trubek
Does the map make the territory? Does the map reflect human intervention or natural conditions? These questions are crucial to contemporary considerations of preserving and promoting place-based food and drink. In this talk, Amy Trubek uses cases from Vermont and Umbria to explore possible answers for the 21st century.
Amy Trubek is a professor at the University of Vermont. She is a co-chair of the food studies journal, Gastronomica, the faculty director of the Graduate Program in Food Systems and the author, among other books, of The Taste of Place, A Cultural Journey into Terroir.
