Described by his fellow students as "the engineer of the half-full glass" for his unwavering optimism, gentle smile and affable manner, Marco Olivi Mocenigo was among the pioneering students who enrolled at the University of Pollenzo in 2004. That year's intake became the first graduates in gastronomy and, over the years, grew into a close-knit family.
Marco was a student of the Bachelor's degree program, from which he graduated in 2008, and subsequently of the Master's program, concluding his academic journey at Pollenzo in 2010. In both instances, his chosen subject of study and thesis was Traditional Balsamic Vinegar of Modena, an emblem of his city and native land. This subject would later become the cornerstone of his professional life.
In Modena, he restored new life to a historic family-owned establishment, the Antica Salumeria Telesforo Fini, which he renamed Bottega San Francesco. He invested all his expertise and passion in this endeavour, and notwithstanding the illness that had befallen him, he continued to work on it with unwavering dedication until his final days.
