Description

The growth of public attention towards catering has highlighted the importance of this sector, not only in economic terms, but also for the important cultural role of synthesis between traditional and modern knowledge, between representation and identity of territories. In the face of a strong public exposure of the sector, there seem to be limited contributions and resources capable of tracing accurate biographies of chefs, hosts and their respective premises that have made the contemporary history of catering.

Since its foundation in 2004, the University of Gastronomic Sciences has established a large collection of audiovisual documentation that attests to the contemporary history of Italian cuisine and the world. Only a limited part of this material has been made available through specific dissemination projects. In particular, the University has a fund of hundred autobiographical interviews of great chefs: among them, just to name a few, there are prestigious names such as Adrià, Bowerman, Cracco, Scabin. Specifically, a large section of the documentation deepens the development of the Piedmontese experiences in the last fifty years, intercepting the evolution of catering science starting from popular taverns.

The fund made available will offer an unprecedented resource – accessible to the general public, professionals and academic researchers – to trace the history of Italian cuisine, with particular attention to the Piedmontese territory thanks to the presence of a large collection of interviews dedicated to the realities of the great catering in the region.

The project aims to:

  • complete the census, filing, reorganization, of this audiovisual and documentary archive heritage attesting a page of first interest in Piedmontese history;
  • retrieve and make accessible through a database this archival heritage;
  • develop a dedicated digital infrastructure for fund conservation;
  • store, index and make available on a digital platform specially developed this archive.
