The project aims to achieve a stable aggregation of local stakeholders for the enhancement of a dual-purpose bovine breed present in Sicily: the breed Cinisara, native genetic heritage with limited circulation, which represents a virtuous and alternative production model to the industrial one.

Description
The project aims to conduct an analysis of the factors of the production chain, relevant in the definition of a production specification that characterizes and enhances the product.
The first characterizing innovation is in the supply chain project, through cooperation between the actors involved, which will create a system of governance capable of aggregating other regional production realities and at the same time transferring the cooperative model.
Upstream of this activity there is a complex process of transfer of innovation that has in the research activity its essential presupposition, linked to the definition of the genetic characteristics of the breed, the definition of nutritional and sensory characteristics of meat, and the definition of a model of production and marketing aimed at standardizing and protecting the market, respecting the historical and anthropological links with the territory.
The first objective is to realize a process of valorization that identifies the distinctive organoleptic and sensory characteristics of the product alongside the productive ones, and that can define a standard alternative production that is best suited to the production in the regional territory and to the average regional business dimension, in compliance with environmental factors and animal health. The second objective is to increase the number of producers who choose Cinisara as a productive breed characterized by a low impact on the environment and a relationship with the territory.
The narration of the salient aspects of the production phases will take place within a complex system of monitoring of the entire production cycle. The consumer guarantee and the quality of products will be entrusted to a process of computerized tracking, starting point for the realization of a protocol of participatory certification and at the same time communication of product quality.
