BIOGRAPHY
Nazarena Cela is a research fellow at the University of Gastronomic Sciences of Pollenzo for the project “NODES-Nord Ovest Digitale e Sostenibile” with the aim to increase the competitiveness of the local agri-food system in terms of food safety, quality and added value, through their communication, digitalization, circularity and sustainability of the supply chain.
In 2019 she obtained the master degree in Food Science and Technology at University of Basilicata, with a thesis aimed at evaluating the effect of samples and consumer characteristics on coffee liking.
In 2019 she enrolled in the PhD course “Agricultural, Forest and Food Sciences”, curriculum “Food Sciences and Engineering” at University of Basilicata. The activities carried out during the PhD project have focused on the optimization of microbrewing process for high quality gluten free beers production, taking into account both technological and sensory aspects.
