From October 22 to 25, the University of Pollenzo will be the center of an important methodological workshop dedicated to the study of recipes and gastronomy as cultural heritage. The initiative is part of the European project RELISH (Reframing European Gastronomy Legacy through Innovation, Sustainability and Heritage), funded by the European Union under the Horizon program.
The workshop will bring together historians, academics, and scholars from various disciplines to discuss the nature of recipes: their creation, interpretation, sharing, and transformation over time and across space. Topics will include ingredients, cooking techniques, preservation methods, cultural identity, political aspects, and digital issues related to recipes.
Sessions will take place between Casa B of the Battaglino Restaurant in Bra and the Aula Magna of UNISG, featuring presentations by internationally renowned experts from universities such as Toronto, Durham, New York, Princeton, and many other European and American institutions.
The event will open with greetings from Rector Nicola Perullo and UNISG President Carlo Petrini and will include round tables, presentations of innovative studies, and discussions on how recipes can be considered cultural heritage and a tool for sustainability.
