The HORIZON RELISH project will develop a multimedia web platform, conferences, public gastronomic events, and publications on the theme of recipes and gastronomy as a significant part of Europe’s cultural heritage. The project’s ultimate goal is to enhance gastronomy as a fundamental element of an inclusive European identity—one that strengthens social cohesion, supports sustainable practices in the hospitality and food service sectors, and promotes the transmission of the European Union’s cultural heritage through education, public engagement, and policymaker outreach.

Through an innovative and systematic approach to the understanding and use of traditional EU recipes via digital and AI-powered technology, RELISH embarks in the production of a visual and verbal food storytelling web platform that aims to mediate social cohesion, reinforce EU cultural heritage transmission at home and abroad through education and public engagement, while addressing sustainable practices in the EU hospitality sector.
Within the project, UNISG leads the “WP5 – COOKING – Recipes and Applications”, which has the following objectives:
- To position Europe’s gastronomic and recipe heritage as accessible, powerful and flexible tools in mediating and facilitating current and future challenges of social, economic, cultural and environmental change.
- To create a methodological and analytical framework to explore recipes based on the concepts of mobility, interdisciplinarity and agency.
- To develop and disseminate a prototype for a recipe visualisation tool aimed at visualising the mobility, interdisciplinarity and agency underpinning the creation and evolution of recipes, and exploring issues connected to the social and environmental sustainability of recipes.
