Pierpaolo Livorno Cooks on Home Ground at the Academic Tables

A close neighbor will be welcomed to the Academic Tables this week: Pierpaolo Livorno, the chef at the Albergo dell’Agenzia restaurant in Pollenzo.

A Piedmontese native, originally from Moretta, Pierpaolo trained at the Pinerolo hospitality school and gained experience at various tourism destinations before finding his way in 2002 to the renowned Guido in Costigliole, moving with the restaurant to Pollenzo from 2003 and then to Fontanafredda. He has been at the Albergo dell’Agenzia since 2013.

His cooking is inspired by the best of Piedmontese cuisine, with a particular focus on local ingredients, Slow Food Presidia products and, of course, seasonality.

At the Academic Tables, Pierpaolo will be serving some classics from the region: fritto misto with fried sweet semolina, artichokes, broccoli and cauliflower; risotto with leeks and potatoes; tripe and beans; veal steak; trout fillet; chickpeas and ribs with vegetables; potato gnocchi and the flavorful griva (pork and pork liver wrapped in caul fat).
