Robert Lemon, The Budding Aromas from Taco Trucks: Taste and Space in Austin, Texas

Austin, Texas is a booming city. Indeed, the fastest growing city in the United States for over the past 20 years. With its population growth has come food trucks. Gourmet trucks for the Anglo middle class, and traditional taco trucks for Mexican immigrants. For sure the gourmet food truck owners experiment with food, but so too do the taco truck operators. In this lecture I present three interviews I performed with traditional taco truck owners about how they decide what to cook based on the social spaces in which they park their trucks. Their subtle choices reflect the changing culture and budding taste preferences of the city’s residents.

Austin, Texas, è una città in fortissima espansione. Infatti è la città degli Stati Uniti che negli ultimi vent’anni è cresciuta più velocemente. Con la crescita della sua popolazione sono arrivati anche i Food Trucks. Gourmet Trucks per la classe media Anglo-americana, e Taco Trucks tradizionali per gli immigrati Messicani. Così come i proprietari dei Gourmet Trucks stanno sperimentando con il cibo,  altrettanto sta succedendo con i proprietari dei Taco Trucks. In questo incontro vengono presentate tre diverse interviste realizzate con proprietari di alcuni Taco Trucks tradizionali incentrate sulla scelta sul cibo da cucinare in relazione all’ambiente sociale e all’area in cui posizionano i loro mezzi. Le loro scelte riflettono i cambiamenti culturali e le preferenze in termini di gusto della popolazione residente in città..
