Being an entrepreneur in the hospitality industry inevitably involves sacrifices. A successful career demands a great passion for food and conviviality, combined with intuition and discipline. Within businesses, everyone, from restaurant manager to waiter, plays a vital and specific role in the growth of the company, with professionalism and experience of crucial importance. During this talk we’ll go behind the scenes with Roberto Costa to discover what challenges a restaurateur faces on a daily basis and what tools can be used to succeed in the market. Roberto Costa was born and raised in the Ligurian city of Genoa. Brought up in the family-run trattoria, he went on to run a number of successful restaurants around Italy before moving to London, where he opened the now-famed Macellaio RC in South Kensington in 2012, a recipient of Gambero Rosso’s coveted three prawns. Today Macellaio RC has six locations across the city and Roberto has become an important figure for many Italians in the UK, having served as director of the board of the Italian Chamber of Commerce and Industry in the UK since 2016. His passion for food and his deep understanding of hospitality led to him being named “Genoese Ambassador in the World” and “First Genoese Gourmet Ambassador” in 2017. In 2018, Roberto founded the RC Academy, a major hospitality education project, which has already trained more than 200 students.

We have adapted the organization of Seminars and Conferences in respect of the government health provisions to guarantee strict compliance from all those involved in the academic experience (students, teachers, administrative staff), in an effort to safeguard everyone’s safety.

Please bear in mind that the access to the University and to in-person activities requires:

  • the possession of a COVID-19 “green certification ”, to be shown to the personnel in charge of carrying out checks in accordance with the provisions outlined by the Ministerial Decree of June 17, 2021;
  •  the use of personal protective equipment (mask) and hand sanitation through use of the dispensers located in the University.
