Food as Indicator of Inequality and Social Hierarchies since 1800 – Peter Scholliers
This talk will address issues of social inequality and the way it can be measured by means of food consumption. First to be considered will be global inequality (which shows signs of diminishing inequality in the long run), followed by local/regional inequality (which shows persistent inequality). In the end, food proves to be a reliable, subtle and tangible measurement of social and cultural inequality.
