{"id":6093,"date":"2012-06-11T09:23:01","date_gmt":"2012-06-11T07:23:01","guid":{"rendered":"https:\/\/www.unisg.it\/?post_type=comunicati&#038;p=6093"},"modified":"2012-06-11T09:23:01","modified_gmt":"2012-06-11T07:23:01","slug":"third-year-students-study-fish-and-fishing-techniques-in-various-italian-regions","status":"publish","type":"post","link":"https:\/\/www.unisg.it\/en\/third-year-students-study-fish-and-fishing-techniques-in-various-italian-regions\/","title":{"rendered":"Third-year students study fish and fishing techniques in various Italian regions"},"content":{"rendered":"<p>From June 3 to June 7, eight groups of third-year students at the University of Gastronomic Sciences in Pollenzo made study trips to Veneto, Tuscany, Marche, Campania, Calabria, Sicily and Puglia to find out more about fishing. Besides developing their knowledge of fish and haute cuisine through fishing trips and tours of local fish markets, they also explored agriculture, oil and wine production and the milk and dairy supply chain.<\/p>\n<p>&nbsp;<\/p>\n<p>One group travelled to Chioggia, in Veneto, where it had the chance to find out more about traditional square net fishing, go out to sea to on a fishing trip, attend a lecture on mollusks at the local fishermen\u2019s consortium and make a final tour of the fish market.<\/p>\n<p>&nbsp;<\/p>\n<p>Other students went to Livorno, in Tuscany. Here they visited the Maricoltura aquaculture center in Rossignano-Solvay, with its fascinating fish hatchery and research facility, and the island prison of Gorgona, famous for its farming projects designed for the rehabilitation of prisoners, before making a fishing trip and a tour of the Livorno fish market.<\/p>\n<p>&nbsp;<\/p>\n<p>A third group went to Portonovo, in the Marche region, where after a fishing trip they visited a cattle and buffalo farm to find out more about the milk and dairy supply chain. They then moved on to the Monteschiavo farm, to study oil, the evolution of oil presses and wine, more precisely Lacrima di Morro d\u2019Alba and Marche spumantes. During a visit to the Conero holiday farm, which produces cereals, fruit and vegetables, honey and beef, they attended a lecture on the \u201cProducers and the Conero Regional Park\u201d project and later took part in cooking workshops in the restaurants of the bay of Portonovo.<\/p>\n<p>&nbsp;<\/p>\n<p>The students bound for Campania spent most of their time in the province of Salerno, where they also focused their attention on fishermen and their activities. They began by visiting a workshop and heard a lecture on the production and salting of\u00a0alici di menaica\u00a0anchovies. After a tour of Salerno\u2019s fish, fruit and vegetable market, they took part in a workshop on\u00a0alici di Cetaraanchovies followed by a demonstration lunch. In Naples they took part in a Neapolitan street food workshop at the famous \u201cTimpani e Tempura\u201d takeaway, while in Marina di Pisciotta they met Vittorio Rambaldo, a representative of the local fishermen\u2019s cooperative to find out about the importance of fishing for the economy and development of the community.<\/p>\n<p>&nbsp;<\/p>\n<p>Other Pollenzo students travelled to Calabria, where they improved their knowledge of fishing with a trip on a boat using traditional systems with a low impact on the environment. They also discovered traditional coastal fishing and the rituals of fishing for swordfish in\u00a0feluche, ancient boats of Egyptian origin. They then visited the Mare Nostro and Calabraittica-Oro Azzurro canneries, specialized in tuna in oil, sardines, anchovies, mackerel and so on, the tuna fishing museum in Bidona and the ancient Roman fish pond of Sant\u2019Irene. During the trip, students were treated to tastings of typical Calabrian fish dishes.<\/p>\n<p>&nbsp;<\/p>\n<p>After trips with local fishermen and a tour of the city\u2019s fish market, the group of students that travelled to Messina, in Sicily, were taken by marine biologist Laura Gugliotta and fishpot maker Giuseppe Arena, to see a collection of ancient fishing baskets known as\u00a0nasse, in a Saracen tower and the mollusk farms at the lakes of Ganzirri. The students also enjoyed an educational sustainable fish dinner, took part in Happy Slow, an event organized by the young members of the Slow Food Valdemone convivium, visited the Messina Provincial Wine Cellar and were treated to a selection of Sicilian street foods, such as\u00a0arancini,\u00a0focaccia messinese\u00a0and\u00a0granita al caff\u00e8with cream, in Itala Marina.<\/p>\n<p>&nbsp;<\/p>\n<p>Other students went to the island of Lampedusa, where they were pu up as guests by local fishing families. Here they were able to develop their knowledge of fishing with boats practicing trawling and purse and net fishing.
