In the afternoon, at 3:00 PM, the graduating students will gather in Piazza Vittorio Emanuele, where the procession will form and head towards the courtyard of the Agenzia, where the graduation ceremony will be held in the Sala Rossa at 3:30 PM.

The 37 theses reflect the richness of the interdisciplinary approach that characterizes education at Pollenzo, bringing together gastronomy, social sciences, culture, economics, communication, sustainability and innovation. From transformations in food consumption to food sovereignty, from the relationship between food and health to gastronomic cultures, from sustainable supply chains to new technologies and business models: the graduates' work addresses some of the most pressing issues concerning the future of food.

Among the topics explored in the Undergraduate Degree in Food Sciences and Cultures are the evolution of wine consumption in Italy, the relationship between sugary drinks and childhood obesity, the sustainability of the tuna supply chain, the history of plants used in Italian bitters, the gastronomy of Cape Verde, the relationship between food and identity in the work of Primo Levi, and the relationship between humans and the microbial world from a One Health perspective.

Other theses explore the world of specialty coffee and tea, chocolate as a cultural object, urban food practices between Milan and Mexico City, the authenticity of pizza, the transition of the Argentine beef sector towards regenerative models, organic products in large-scale retail, the relationship between food and eating disorders, geographical indications within the Common Agricultural Policy, and the history of the fork as an object capable of telling the story of the evolving relationship between humans and food.

The theses for the Graduate Degree in Food Industry Management, on the other hand, focus on the transformations and challenges facing the contemporary food industry: from the global cocoa supply chain to circular economy strategies, from the evolution of connected labels in the wine & spirits sector to chocolate marketing, and from strategies for European cultivated meat startups to the role of food and wine events in territorial communication.

A range of different perspectives, united by the desire to understand food in all its complexity and to explore the transformations reshaping the contemporary food system.

Here are the 37 graduating students and their theses

Undergraduate Degree in Food Sciences and Cultures

Marta Andreoli, from Piancogno (BS, Lombardy), is defending her thesis entitled: “Intergenerational Wine Consumption in Italy: Evolution and Decline over the Last Decades.
