{"id":21178,"date":"2016-05-06T15:35:32","date_gmt":"2016-05-06T13:35:32","guid":{"rendered":"https:\/\/www.unisg.it\/en\/the-new-gastronomes\/food-culture-consumption-society\/"},"modified":"2016-09-26T17:36:27","modified_gmt":"2016-09-26T15:36:27","slug":"food-culture-consumption-society","status":"publish","type":"post","link":"https:\/\/www.unisg.it\/en\/food-culture-consumption-society\/","title":{"rendered":"FOOD CULTURE, CONSUMPTION &#038; SOCIETY"},"content":{"rendered":"<p>On Wednesday 20<sup>th<\/sup> April, Professor Paolo Corvo\u2019s book \u201cFood Culture, Consumption and Society\u201d was presented at the auditorium of the University of Gastronomic Sciences.<\/p>\n<p>It was a big opportunity to listen and learn something from Carole Counihan, who personally launched the book. Prof. Counihan is one of the most important food anthropologists in the world; she now teaches at the University of Gastronomic Sciences as visiting professor of Anthropology Nutrition<\/p>\n<p>She boasts a respectable curriculum which includes: a B.A. in History cum laude from Stanford University and a M.A. and a Ph. D in Anthropology from the University of Massachusetts.<\/p>\n<p>Counihan said: \u201cPaolo Corvo takes a refreshing look at the role of food in society, using an interdisciplinary, holistic, ecological, and global approach to illuminate modern consumption patterns.\u201d The book is different from most of the other sociological researches because it is based on a qualitative methodology instead of a quantitative one, which is considered a superficial method by anthropologists.<\/p>\n<p>This qualitative methodology includes focus group surveys, personal interviews, participant observations and their relationship with new media: Facebook and Instagram.<\/p>\n<p>The research work equally looks at both sociology and anthropology and <img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-21176 size-full\" src=\"https:\/\/www.unisg.it\/assets\/FOOD_CULTURE_-CONSUMPTION_SOCIETY_CORVO.jpg\" alt=\"FOOD_CULTURE_ CONSUMPTION_SOCIETY_CORVO\" width=\"286\" height=\"450\" srcset=\"https:\/\/www.unisg.it\/assets\/FOOD_CULTURE_-CONSUMPTION_SOCIETY_CORVO.jpg 286w, https:\/\/www.unisg.it\/assets\/FOOD_CULTURE_-CONSUMPTION_SOCIETY_CORVO-191x300.jpg 191w\" sizes=\"auto, (max-width: 286px) 100vw, 286px\" \/>it includes a summary of classical authors like Pierre Bourdieu, Serge Laotuche and Claude L\u00e9vi-Strauss.<\/p>\n<p>After this first analysis of the methodology, Carol Counihan introduced the main issues discussed in the book: \u201cCorvo faced a new research area which looks at new places where people consumes food.\u201d In fact, she added that \u201cdifferently from the past, today people consume food outside the home.\u201d This change has favoured restaurants but also a new concept of fast food: food trucks, which require a low initial capital expenditure.<\/p>\n<p>Another issue that Professor Corvo\u2019s book examined is the relationship between food and health. Regarding this argument, Counihan said: \u201cIn the contemporary food systems health and illnesses have a very big importance. So we have issues of over nutrition and under nutrition; we have issues about diabetes and last we have issues about allergies, gluten allergy in particular.\u201d<\/p>\n<p>Professor Counihan continued her introduction with food sovereignty and land grabbing. She compared what occurred with Native Americans with some current cases: \u201cIn the United States we had land grabbing of the lands of the native people, the American Indians, who are slowly getting pushed into smaller and smaller areas called reservations and are losing their ability to produce their own food.\u201d<\/p>\n<p>The last two issues that concluded the American anthropologist\u2019s speech were food waste and food tourism, concentrating on how food tourism can become be sustainable.<\/p>\n<p>After this presentation, Counihan established a debate with Professor Corvo thanks to a question that allowed to further explore the research; she asked: \u201cWhy did you focus this book on consumption? \u201cBecause consumption is the basis of relations between people with different lifestyles and different behaviours,\u201d answered Corvo. The sociologist recognized the importance of opening our minds to new studies about food, which are developed by researchers with different habits, as is the case of South American or African sociologists.<\/p>\n<p>Corvo underlined two other crucial aspects discussed in his book.
