  • WINE EXPERIENCE IN THE WINE BANK: activity to discover the wines from the Langa region held in the stunning underground cellars of late King Charles Albert

SEMINAR – how do truffles grow

  • Brief lesson on caracteristics and varieties
  • Habitat of the truffle with a focus on sustainability and biodiversity

EXPERIENTIAL ACTIVITY – Truffles and Sensoriality

  • Tasting and sensory experience around truffles at the UNISG Sensory Analysis Lab

Dinner at Boccondivino Restaurant (historic Osteria, where the Slow Food movement began) – Bra

Whole-day activity based on truffles and how they can be used in the kitchen. Practical cooking activity with the Pollenzo Food Lab chef and with a Michelin Star guest chef to prepare fresh pasta and other local dishes that are perfect to pair with White Truffles. Convivial meal to share the dishes prepared together.

Dinner at a Michelin Starred Restaurant

Truffle hunting in the Roero woods with a “trifolau” (a local truffle hunter) to assist a live truffle hunt and understand how their dogs are trained. Tricks of the trade and why “trifolau” choose to hunt at night
