Inspired by Carlo Petrini’s desire to see food shops brought back to historic town centers, the idea of Local took shape in collaboration with the UNISG students on the Systemic Food Design course: a project to encourage small-scale retail and a place for everyday shopping that offers a well-thought-out selection of local products and recognizes the value of artisanal producers.

Behind the counter, welcoming customers and offering advice and tastings, are two former students, gastronomes putting into practice what they studied in lectures and learned on study trips around the world.

The products on the shelves have been selected based on the principle of local sourcing, with visits to farms, dairies and workshops in order to get to know individual producers in the surrounding area, mostly in the province of Cuneo and also in the rest of Piedmont, always trying to identify the best area for the production of a specific product. The selection has gone beyond regional borders only for a few essential products, like olive oil from Liguria, and for the Slow Food Presidia, a valuable project that Local wants to support.

local_bra_unisgLocal is a destination for everyday shopping, selling all types of foods: fruits and vegetables, cured meats and cheeses, preserves and dry goods, including a selection of products sold without packaging, to combat waste and help consumers save money.

Recent innovations include beer straight from the keg from a number of Piedmontese breweries, selected with the help of master brewer Andrea Bertola, and, in the afternoons, the direct sale of fruit and vegetables by local growers, market style.

Local is also a teaching space, an extension of the University of Gastronomic Sciences, offering shopping and consumption education and serving as a tasting and event venue, where products can be sampled for lunch, a snack or an aperitivo.

Local’s support and base is represented by the Local Food Community, a group of people who have believed in the project since the beginning and who pay for their shopping in advance so that the shop can meet the needs of its small-scale suppliers.
